  1. 1. Boil the potatoes in salted water for 15 to 20 minutes until tender. Let them cool, peel them and slice them.
  2. 2. Meanwhile, clean and wash the spring onions, cucumber, peppers and tomatoes. Slice the spring onions into rings and the rest into slices or cubes. Whisk the oil with vinegar and mustard and season with salt and pepper. Crumble the sheep's cheese.
  3. 3. Mix the potatoes with the vegetables and the dressing. Season with salt and pepper and serve the salad topped with the sheep's cheese.
