  1. 1. Peel the kohlrabi. Wash the apples, dry them, cut them into quarters, and remove the core.
  2. 2. Wash half the cucumber, peel it, cut it in half lengthwise, and remove the seeds. Quarter the bell pepper, remove the seeds, and wash it.
  3. 3. Cut the kohlrabi, apples, cucumber, and bell pepper into roughly equal-sized cubes.
  4. 4. Wash the dill, shake off excess water, pluck off the small leaves, and chop them finely. Squeeze the juice from half the lemon (about 2 tablespoons).
  5. 5. Mix the yogurt, lemon juice, and dill together in a bowl.
  6. 6. Toss the vegetables with the yogurt sauce, season with salt and pepper, and let the salad marinate for 15 minutes.
  7. 7. Meanwhile, wash the leaf salads, remove tough stems, and spin them dry. Peel the onion and cut it into very thin rings. Place the salad leaves on a plate, arrange the vegetable salad on top, and sprinkle the onion rings over it.
