🍽️ Colorful Vegetable Salad

Ingredients
- 1 kohlrabi
- 2 small tart apples
- 0.5 cucumber
- 1 yellow bell pepper
- 0.5 bunch dill
- 0.5 lemon
- 200 g yogurt (3.5 % fat)

- 2 leaves lettuce (e.g. head lettuce, radicchio)
- 1 red onion
Instructions
- 1. Peel the kohlrabi. Wash the apples, dry them, cut them into quarters, and remove the core.
- 2. Wash half the cucumber, peel it, cut it in half lengthwise, and remove the seeds. Quarter the bell pepper, remove the seeds, and wash it.
- 3. Cut the kohlrabi, apples, cucumber, and bell pepper into roughly equal-sized cubes.
- 4. Wash the dill, shake off excess water, pluck off the small leaves, and chop them finely. Squeeze the juice from half the lemon (about 2 tablespoons).
- 5. Mix the yogurt, lemon juice, and dill together in a bowl.
- 6. Toss the vegetables with the yogurt sauce, season with salt and pepper, and let the salad marinate for 15 minutes.
- 7. Meanwhile, wash the leaf salads, remove tough stems, and spin them dry. Peel the onion and cut it into very thin rings. Place the salad leaves on a plate, arrange the vegetable salad on top, and sprinkle the onion rings over it.
