  1. 1. Wash all the fruit under running water.
  2. 2. Use a sharp knife to cut a line around the top third of the melon.
  3. 3. Pierce the melon along this line in a star shape towards the center to create two halves with jagged edges.
  4. 4. Use a melon baller to remove flesh from the larger half until only a 2 cm thick layer remains.
  5. 5. Remove the flesh from the smaller half completely.
  6. 6. Peel the orange and remove the white pith (this is called filleting).
  7. 7. Cut the orange into individual segments.
  8. 8. Quarter the apple and remove the core.
  9. 9. Cut the apple into segments as well.
  10. 10. Peel the kiwi and slice it.
  11. 11. Remove the stems from the currants, but keep one sprig for decoration.
  12. 12. Pit the greengage plums, but keep a few with their pits.
  13. 13. Mix the remaining fruits in a bowl.
  14. 14. Fill the fruit mixture into the large melon half.
  15. 15. Garnish the top with the remaining plums, the currant sprig, and fruit segments.
  16. 16. Whisk together lemon juice, honey, and rum to make a sauce.
  17. 17. Pour the sauce over the fruits.
  18. 18. Place the filled melon in the refrigerator for about one hour to let the flavors meld.
