  1. 1. Season the chicken meat with salt and pepper. Brown one side of the meat in hot clarified butter in an ovenproof pan. Turn the meat and place the pan in the preheated oven (180 degrees). Finish cooking the meat in the oven for about 10 minutes.
  2. 2. Wash the salads and shake them dry. Tear the leaves into smaller pieces.
  3. 3. Mix vinegar and oil. Season the mixture with salt and pepper. Stir in cream and Parmesan and adjust the seasoning of the dressing. Mix the salads and arrange them on plates. Slice the cooked chicken breast fillet and place it on the salad. Serve the dressing separately.
