🍽️ Colorful Raw Vegetable Salad

Ingredients
- 200 g red cabbage (1 piece)
- 200 g yellow bell peppers (1 yellow bell pepper)
- 150 g chickpeas (can; drained weight)
- 20 g walnut kernels
- 150 g blood orange (1 blood orange)
- 1 tbsp olive oil
- 1 tbsp orange juice
- 1 tsp honey
- 1 tsp mustard
- 1 pinch turmeric
- salt
- pepper
- 100 g baby spinach (or baby leaf salad)
Instructions
- 1. Shred the red cabbage into thin strips and wash it. Cut the pepper in half, remove the seeds, wash it, and cut it into strips as well.
- 2. Rinse the chickpeas and let them drain. Meanwhile, toast the walnuts briefly in a pan without fat over medium heat. Peel the blood orange and slice it.
- 3. Whisk the oil with the orange juice, one tablespoon of water, the honey, the mustard, and a pinch of turmeric for the dressing. Finally, season the mixture with salt and pepper.
- 4. Wash the spinach, shake it dry, and arrange it on a large plate. Distribute the red cabbage and pepper strips, the chickpeas, the walnuts, and the orange slices on top. Drizzle the dressing over everything.
