  1. 1. Shred the red cabbage into thin strips and wash it. Cut the pepper in half, remove the seeds, wash it, and cut it into strips as well.
  2. 2. Rinse the chickpeas and let them drain. Meanwhile, toast the walnuts briefly in a pan without fat over medium heat. Peel the blood orange and slice it.
  3. 3. Whisk the oil with the orange juice, one tablespoon of water, the honey, the mustard, and a pinch of turmeric for the dressing. Finally, season the mixture with salt and pepper.
  4. 4. Wash the spinach, shake it dry, and arrange it on a large plate. Distribute the red cabbage and pepper strips, the chickpeas, the walnuts, and the orange slices on top. Drizzle the dressing over everything.
