- 800 g firm-boiling potatoes
- salt
- 200 g cherry tomatoes
- 1 onion
- 2 sprigs parsley
- 600 g turkey breast fillet
- 2 tbsp olive oil
- pepper
Instructions
- 1. Peel the potatoes, wash them thoroughly, and cut them into small cubes. Then boil the cubes in boiling salted water for about 20 minutes.
- 2. In the meantime, wash the tomatoes, pat them dry, and cut them in half. Peel the onion and slice it into thin strips. Wash the parsley, shake off excess water, pluck off the leaves, and chop them finely.
- 3. Pat the turkey breast dry with a kitchen towel and cut it into bite-sized pieces. Heat the oil in a pan. Brown the turkey pieces on all sides. Remove them from the pan and set them aside.
- 4. Add the potatoes to the pan and fry them until golden yellow on all sides. Add the onion strips and fry them along with the potatoes. Return the meat and tomatoes to the pan, season everything with salt and pepper, and fry for another 2 to 3 minutes.
- 5. Fold in the chopped parsley and serve the dish immediately.
