  1. 1. Wash the asparagus and peel the lower part. Cut off the tough ends. Clean the snow peas and wash them as well. Boil both for 2 minutes in salted water, drain, and rinse with cold water to stop the cooking process.
  2. 2. Clean the mushrooms, wipe them dry, and halve them. Peel the onions and cut them into half-centimeter thick strips. Peel and clean the carrots and slice them thinly.
  3. 3. Fry the mushrooms in one tablespoon of butter for 3 minutes. Remove them. Fry the onions and carrots in another tablespoon of butter for 2 minutes. Add the broth and simmer for 10 minutes until the liquid has evaporated.
  4. 4. Add the asparagus, snow peas, mushrooms, and remaining butter. Heat everything for 3 to 4 minutes. Season with salt, pepper, chili flakes, and lemon zest. This dish pairs well with steamed shrimp or pork crust roast.
