🍽️ Colorful Vegetable Pan with Mushrooms

Ingredients
- 1 bunch green asparagus
- 200 g snow peas
- 400 g small mushrooms
- 2 small onions
- 2 carrots
- 4 tbsp butter
- 300 ml vegetable broth
- salt
- pepper from the mill
- chili flakes
- 0.5 tsp grated, unwaxed lemon zest
Instructions
- 1. Wash the asparagus and peel the lower part. Cut off the tough ends. Clean the snow peas and wash them as well. Boil both for 2 minutes in salted water, drain, and rinse with cold water to stop the cooking process.
- 2. Clean the mushrooms, wipe them dry, and halve them. Peel the onions and cut them into half-centimeter thick strips. Peel and clean the carrots and slice them thinly.
- 3. Fry the mushrooms in one tablespoon of butter for 3 minutes. Remove them. Fry the onions and carrots in another tablespoon of butter for 2 minutes. Add the broth and simmer for 10 minutes until the liquid has evaporated.
- 4. Add the asparagus, snow peas, mushrooms, and remaining butter. Heat everything for 3 to 4 minutes. Season with salt, pepper, chili flakes, and lemon zest. This dish pairs well with steamed shrimp or pork crust roast.
