Ingredients
- 200 g sweet potatoes (1 small sweet potato)
- 200 g lotus root (alternatively: 1 parsnip)
- 1 beetroot (200 g)
- 200 g purple potatoes
- vegetable oil for frying
- salt
- ras el-hanout (Oriental spice)
- cayenne pepper
Instructions
- 1. Wash the root vegetables thoroughly and peel them. Slice or grate them into paper-thin rounds. Heat the oil in a pot to 170 degrees Celsius. Pat the vegetable slices completely dry with kitchen paper. Then fry them in batches in the hot oil until crispy.
- 2. Remove the chips from the oil using a slotted spoon and let them drain on kitchen paper. Season them with salt, Ras el-Hanout (a spicy spice blend), and a pinch of cayenne pepper. Serve them in a bowl.
