  1. 1. Wash the root vegetables thoroughly and peel them. Slice or grate them into paper-thin rounds. Heat the oil in a pot to 170 degrees Celsius. Pat the vegetable slices completely dry with kitchen paper. Then fry them in batches in the hot oil until crispy.
  2. 2. Remove the chips from the oil using a slotted spoon and let them drain on kitchen paper. Season them with salt, Ras el-Hanout (a spicy spice blend), and a pinch of cayenne pepper. Serve them in a bowl.
