  1. 1. Thoroughly wash the oakleaf lettuce, spin it dry, and cut it into small, bite-sized pieces.
  2. 2. Break the whole grain bread into large chunks and crush them into fine crumbs using a stand mixer or food processor.
  3. 3. Mix half of the breadcrumbs with the cream cheese in a small bowl and let the mixture rest for five minutes.
  4. 4. Coarsely crush the peppercorns in a mortar. Mix them with the remaining breadcrumbs and a pinch of salt, then spread the mixture onto a small plate.
  5. 5. Rinse a teaspoon with cold water to wet it. Use it to scoop out six equal-sized mounds from the cream cheese mixture. Lightly wet your fingers, shape the mounds into balls, and roll them in the pepper-breadcrumb mixture.
  6. 6. Whisk the vegetable broth with salt, pepper, and vinegar. Then, thoroughly mix the sauce with the lettuce in a bowl.
  7. 7. Divide the salad onto two plates. Arrange the cream cheese balls on top and serve the dish.
