🍽️ Colorful Cream Cheese Balls

Ingredients
- 150 g oak leaf lettuce (1 oak leaf lettuce)
- 30 g rye whole grain bread (1 slice)
- 80 g cream cheese (13 % fat)
- colorful peppercorns
- coarse salt
- 3 tbsp classic vegetable broth
- pepper
- 2 tsp mild white wine vinegar
Instructions
- 1. Thoroughly wash the oakleaf lettuce, spin it dry, and cut it into small, bite-sized pieces.
- 2. Break the whole grain bread into large chunks and crush them into fine crumbs using a stand mixer or food processor.
- 3. Mix half of the breadcrumbs with the cream cheese in a small bowl and let the mixture rest for five minutes.
- 4. Coarsely crush the peppercorns in a mortar. Mix them with the remaining breadcrumbs and a pinch of salt, then spread the mixture onto a small plate.
- 5. Rinse a teaspoon with cold water to wet it. Use it to scoop out six equal-sized mounds from the cream cheese mixture. Lightly wet your fingers, shape the mounds into balls, and roll them in the pepper-breadcrumb mixture.
- 6. Whisk the vegetable broth with salt, pepper, and vinegar. Then, thoroughly mix the sauce with the lettuce in a bowl.
- 7. Divide the salad onto two plates. Arrange the cream cheese balls on top and serve the dish.
