🍽️ Colorful Beef Patties with Creamy Potato-Broccoli Mash

Ingredients
- 400 g floury cooking potatoes
- salt
- 200 g broccoli florets
- 1 stale whole wheat roll
- 300 g zucchini
- 1 small carrot
- 1 onion
- 1 tbsp olive oil
- 500 g ground beef
- 1 egg
- 1 tsp medium-hot mustard
- pepper
- 50 g butter
- 150 ml lukewarm milk (1.5% fat)
- nutmeg
- 100 g sour cream
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for 30 minutes.
- 4. Add the prepared broccoli to the potato water 15 minutes before the end of the cooking time.
- 5. Cook the potatoes and broccoli together until they are tender.
- 6. Soak the bread roll in lukewarm water.
- 7. Wash the zucchini.
- 8. Grate the zucchini finely.
- 9. Squeeze the liquid out of the grated zucchini.
- 10. Peel the carrot.
- 11. Grate the carrot finely as well.
- 12. Peel the onion.
- 13. Chop the onion finely.
- 14. Heat oil in a pan.
- 15. Sauté the onions until translucent.
- 16. Remove the pan from the heat.
- 17. Let the onion mixture cool down.
- 18. Mix the minced beef with the egg.
- 19. Add the grated vegetables.
- 20. Add the cooled onions to the meat mixture.
- 21. Stir in the mustard.
- 22. Squeeze the bread roll well and add it to the mixture.
- 23. Work everything into a homogeneous dough.
- 24. Season the mixture with salt and pepper.
- 25. Shape 12 to 15 patties from the mixture.
- 26. Heat half of the butter in a pan.
- 27. Brown the patties on all sides over medium to high heat.
- 28. This takes about 5 to 7 minutes.
- 29. Reduce the heat.
- 30. Let the patties cook through for about 10 minutes.
- 31. Drain the potatoes and broccoli.
- 32. Let them steam dry for a moment.
- 33. Mash the potatoes and broccoli.
- 34. Mix the puree with milk.
- 35. Stir in the remaining butter.
- 36. Work everything into a smooth puree.
- 37. Season the puree with salt, pepper, and nutmeg.
- 38. Remove the patties from the pan.
- 39. Deglaze the pan juices in the pan with about 60 milliliters of water.
- 40. Bring the sauce to a boil.
- 41. Stir in salt, pepper, and sour cream.
- 42. Serve the potato-broccoli mash together with the patties and the sauce.
