🍽️ Colorful Grill Skewers with Marinated Radish

Ingredients
- 200 g radish
- 1 bunch parsley
- 150 ml rice vinegar
- 2 soy sauce
- 2 wasabi (hot horseradish paste)
- 200 g broccoli
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots
- 1 stalk celery
- 1 spring onion
- 8 cherry tomatoes
- 6 shallots
- 0.5 mango
- 200 g turkey breast fillet
- 4 scampi (peeled)
- 200 g beef fillet
- 150 g salmon
- 150 g cod
- juice of one lemon
- salt
- pepper (from the mill)
Instructions
- 1. Cut the radish into thin sticks.
- 2. Wash the parsley and pat it dry.
- 3. Pluck off the parsley leaves and chop them finely.
- 4. Put the parsley together with the radish into a bowl.
- 5. Bring the vinegar and the same amount of water to a boil.
- 6. Stir in the soy sauce and wasabi powder.
- 7. Pour the marinade over the radish.
- 8. Cover the bowl with cling film.
- 9. Let it marinate overnight.
- 10. Divide the broccoli into small florets.
- 11. Blanch them for about 2 minutes in boiling salted water (cook briefly in boiling water).
- 12. Wash and clean the remaining vegetables.
- 13. Halve the pepper, remove the core.
- 14. Cut it into 3 cm large diamonds.
- 15. Peel the carrot, cut it into 0.5 cm thick slices.
- 16. Shorten these to 3 cm in length.
- 17. Halve the celery and spring onion lengthwise.
- 18. Cut them into 3 cm long pieces.
- 19. Peel the shallots and quarter them.
- 20. Peel the mango and cut it into 2 cm large cubes.
- 21. Cut the turkey meat into strips.
- 22. Cut the beef fillet into strips.
- 23. Acidify the fish and the scampi with lemon juice.
- 24. Season the fish with salt and pepper.
- 25. Cut it into strips as well.
- 26. Alternately thread broccoli, carrot, celery and cherry tomatoes onto the skewers.
- 27. Alternately thread turkey cubes, shallots, broccoli, pepper and mango onto the skewers.
- 28. Alternately thread beef, shallot, spring onion, carrot and pepper onto the skewers.
- 29. Alternately thread scampi, shallot, cherry tomato and mango onto the skewers.
- 30. Thread the salmon and the cod accordion-style onto the skewers.
- 31. Grill the skewers for about 3 minutes on both sides until brown.
- 32. Serve them with the marinated radish.
- 33. Serve fresh white bread alongside.
