🍽️ Bulgur Salad Without Tomato Paste

Ingredients
- 300 ml vegetable broth
- 200 g bulgur (durum wheat semolina)
- 4 tomatoes
- 1 red onion
- 1 bunch flat-leaf parsley
- 1 bunch cilantro
- 3 tbsp lemon juice
- 5 tbsp olive oil
- salt
- pepper
Instructions
- 1. Bring the broth to a boil in a pot. Stir in the bulgur and simmer on low heat for about 10 minutes. Fluff the bulgur with a fork and let it cool.
- 2. Wash the tomatoes, halve them, remove the core, and dice them finely. Peel the onion, halve it, and cut it into thin strips. Wash the parsley and cilantro, shake them dry, and chop the leaves coarsely.
- 3. For the dressing, mix olive oil and lemon juice and season with salt and pepper. Mix the tomatoes, onions, and dressing into the cooked bulgur. Let the bulgur salad marinate for 20 minutes and serve.
