  1. 1. Bring broth to a boil in a pot, stir in bulgur, remove from heat, and let the bulgur soak for about 30 minutes.
  2. 2. Wash tomatoes and halve or quarter them depending on size. Wash spring onions, trim them, and slice into thin rings.
  3. 3. Wash parsley, shake dry, pluck leaves, and chop finely. Mix with lemon juice, olive oil, salt, and pepper, then combine with vegetables and bulgur. Let it marinate for about 20 minutes and adjust seasoning with salt and pepper before serving.
