🥗 Crunchy Bulgur Salad with Fresh Herbs

Ingredients
- 400 g Bulgur
- 5 Spring onions
- 2 Garlic cloves
- 400 g Tomatoes
- 5 tbsp Parsley
- 3 tbsp Lemon balm
- 4 tbsp Lime juice
- 6 tbsp Olive oil
- Salt
- Pepper (from the mill)
Instructions
- 1. Put the bulgur into a pot.
- 2. Cover it with about 800 milliliters of cold water that you have seasoned with salt.
- 3. Bring the water to a boil.
- 4. Reduce the heat to a low setting.
- 5. Let the bulgur simmer for about 10 minutes.
- 6. Remove the pot from the stove.
- 7. Cover the pot.
- 8. Let the bulgur swell for 15 minutes.
- 9. Check if the bulgur is cooked but still has a slight bite.
- 10. Slice the spring onions into rings.
- 11. Chop the garlic cloves finely.
- 12. Halve the tomatoes and remove the seeds.
- 13. Cut the tomatoes into cubes.
- 14. Chop the parsley and the mint finely.
- 15. Let the bulgur cool down a bit.
- 16. Mix the bulgur with the spring onions, the garlic, the tomatoes, and the herbs.
- 17. Stir in the lime juice and the oil.
- 18. Season the salad to taste with salt and pepper.
