🍽️ Meatballs with Fried Egg and Capers-Anchovy Butter

Ingredients
- 1 stale roll
- 75 ml lukewarm milk
- 1 onion
- 1 tbsp butter
- 600 g mixed minced meat
- 1 egg
- 1 tbsp hot mustard
- 1 tsp dried marjoram
- 2 tbsp freshly chopped parsley
- salt
- pepper (from the mill)
- 2 tbsp breadcrumbs
- 40 g soft butter
- 1 tbsp capers
- 2 anchovy fillets
- 2 tbsp freshly chopped parsley
- 4 eggs
- 2 tbsp vegetable oil
Instructions
- 1. Place the bread roll in the milk and let it soak.
- 2. Peel the onion and dice it into very small cubes.
- 3. Heat the butter in a pan and sauté the onion cubes briefly until they are soft and translucent.
- 4. Squeeze the soaked bread roll well to remove excess milk.
- 5. Mix the minced meat with the squeezed bread, the egg, the mustard, the sautéed onions, the marjoram, and the parsley.
- 6. Season the meat mixture with salt and pepper.
- 7. If the mixture is too sticky, stir in some breadcrumbs.
- 8. Form about eight small balls from the meat mixture.
- 9. Flatten the balls slightly.
- 10. Heat oil in a pan over medium heat.
- 11. Fry the meatballs in the hot oil for about 4 to 5 minutes on each side until golden brown.
- 12. Put the butter into a small bowl.
- 13. Finely chop the capers.
- 14. Finely chop the dabbed anchovy fillets.
- 15. Stir the parsley into the butter.
- 16. Fold in the chopped capers and anchovies into the butter.
- 17. Place a dollop of the capers-anchovy butter on each meatball.
- 18. Let the butter melt over the meatballs.
- 19. Heat oil in another pan.
- 20. Fry four fried eggs in the hot oil.
- 21. Season the fried eggs with salt and pepper.
- 22. Serve the fried eggs together with the meatballs.
- 23. Serve with fried potatoes as desired.
