Ingredients
- 800 g firm-cooking potatoes
- 1 onion
- 3 tbsp vegetable oil
- 175 ml meat broth
- 3 tbsp wine vinegar
- salt
- pepper (from the mill)
- 1 cucumber
- 1 tbsp chive rings
- 1 roll (from the previous day)
- 1 onion
- 1 tbsp butter
- 600 g mixed minced meat
- 1 egg
- 1 tsp paprika powder
- 1 tsp hot mustard
- salt

- oil (for frying)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Cook the potatoes in salted water for about 30 minutes until tender.
- 3. Drain the cooking water.
- 4. Peel the warm potatoes.
- 5. Slice the potatoes.
- 6. Peel one onion.
- 7. Dice the onion finely.
- 8. Heat 1 tablespoon of oil in a pan.
- 9. Sauté the onion cubes in the hot oil until translucent.
- 10. Pour in the broth.
- 11. Bring the mixture to a boil.
- 12. Season with vinegar, salt, and pepper.
- 13. Pour the hot broth over the potato slices.
- 14. Gently fold the potatoes in.
- 15. Let the salad rest for about 20 minutes.
- 16. Peel a cucumber.
- 17. Halve the cucumber lengthwise.
- 18. Remove the seeds with a teaspoon.
- 19. Slice or shred the cucumber thinly.
- 20. Soak a bread roll in a little water.
- 21. Peel another onion.
- 22. Dice this onion finely.
- 23. Sauté the onion in hot butter until translucent.
- 24. Squeeze the soaked bread roll.
- 25. Mix the sautéed onion, minced meat, bread roll, an egg, paprika powder, and mustard in a bowl.
- 26. Knead the ingredients into a dough.
- 27. Season the meat mixture generously with salt and pepper.
- 28. Shape 8 meatballs from the mixture.
- 29. Heat 3-4 tablespoons of oil in a pan.
- 30. Fry the meatballs in the hot oil.
- 31. Fry them for about 3 minutes on each side.
- 32. Mix the cucumber slices with the remaining oil.
- 33. Fold the cucumber into the potato salad.
- 34. Adjust the seasoning of the salad.
- 35. Sprinkle the salad with chives.
- 36. Plate the meatballs.
- 37. Serve the lukewarm potato salad alongside.
- 38. Serve the salad with the meatballs.
- 39. Serve mustard on the side if desired.
