🍽️ Beetroot Patties with Beans

Ingredients
- 250 g beetroot
- 500 g green beans
- salt
- 1 onion
- 1 clove garlic
- 1 tbsp fresh chopped tarragon
- 2 tbsp butter
- ground cumin
- 1 day-old roll
- 1 onion

- 2 eggs
- 1 tbsp fresh chopped parsley
- 600 g mixed minced meat
- breadcrumbs (as needed)
- 1 tsp hot mustard
- salt
- pepper (from the mill)
- ghee (for frying)
- lemon wedges
- capers
- anchovies
Instructions
- 1. Wash the beetroots thoroughly.
- 2. Steam the beetroots with the skin on for about 35 minutes until tender.
- 3. Wash the beans and trim the ends.
- 4. Boil the beans in salted water for approx. 5 minutes until al dente (cook briefly in boiling water).
- 5. Rinse the beans with cold water and let them drain.
- 6. Cut the beans diagonally into pieces.
- 7. Rinse the beetroots with cold water.
- 8. Peel the cooled beetroots.
- 9. Cut the beetroots into small cubes.
- 10. Soak the bread roll in a little warm water.
- 11. Peel the onion and dice it finely.
- 12. Sweat the onion cubes in hot butter until translucent (cook until soft but not brown).
- 13. Squeeze the soaked bread roll.
- 14. Mix the squeezed-out bread roll with the minced meat.
- 15. Add the eggs and the parsley to the meat mixture.
- 16. Add breadcrumbs if necessary so that the mixture is easy to shape.
- 17. Season the meat mixture with mustard, salt, and pepper.
- 18. Form small patties from the mixture.
- 19. Fry the patties in hot clarified butter (pure butter fat) for 3-4 minutes on each side until golden brown.
- 20. Sweat the onion with the garlic briefly in hot butter.
- 21. Add the beans and the tarragon.
- 22. Toss everything briefly.
- 23. Season the bean mixture with salt.
- 24. Toss the beetroots in the remaining butter.
- 25. Season the beetroots with salt and cumin.
- 26. Place the patties on top of the bean mixture.
- 27. Arrange the beetroots around them.
- 28. Serve the dish garnished with lemon wedges, anchovies, and capers.
