  1. 1. Wash the beetroots thoroughly.
  2. 2. Steam the beetroots with the skin on for about 35 minutes until tender.
  3. 3. Wash the beans and trim the ends.
  4. 4. Boil the beans in salted water for approx. 5 minutes until al dente (cook briefly in boiling water).
  5. 5. Rinse the beans with cold water and let them drain.
  6. 6. Cut the beans diagonally into pieces.
  7. 7. Rinse the beetroots with cold water.
  8. 8. Peel the cooled beetroots.
  9. 9. Cut the beetroots into small cubes.
  10. 10. Soak the bread roll in a little warm water.
  11. 11. Peel the onion and dice it finely.
  12. 12. Sweat the onion cubes in hot butter until translucent (cook until soft but not brown).
  13. 13. Squeeze the soaked bread roll.
  14. 14. Mix the squeezed-out bread roll with the minced meat.
  15. 15. Add the eggs and the parsley to the meat mixture.
  16. 16. Add breadcrumbs if necessary so that the mixture is easy to shape.
  17. 17. Season the meat mixture with mustard, salt, and pepper.
  18. 18. Form small patties from the mixture.
  19. 19. Fry the patties in hot clarified butter (pure butter fat) for 3-4 minutes on each side until golden brown.
  20. 20. Sweat the onion with the garlic briefly in hot butter.
  21. 21. Add the beans and the tarragon.
  22. 22. Toss everything briefly.
  23. 23. Season the bean mixture with salt.
  24. 24. Toss the beetroots in the remaining butter.
  25. 25. Season the beetroots with salt and cumin.
  26. 26. Place the patties on top of the bean mixture.
  27. 27. Arrange the beetroots around them.
  28. 28. Serve the dish garnished with lemon wedges, anchovies, and capers.
