  1. 1. Pour the milk over the toast slices and let them soak completely.
  2. 2. Peel the onion and dice it into very small cubes.
  3. 3. Rinse the parsley and shake it dry thoroughly.
  4. 4. Pick the parsley leaves off the stems and chop them finely.
  5. 5. Heat the butter in a pan and sauté the onion cubes in it for 3 to 4 minutes until they are soft and translucent.
  6. 6. Add the chopped parsley to the onion and sauté it together for about one minute.
  7. 7. Remove the pan from the heat and transfer the onion-parsley mixture into a separate bowl.
  8. 8. Let the onion mixture cool down completely before you proceed.
  9. 9. Squeeze the soaked toast slices firmly with your hands to remove all the milk.
  10. 10. Add the minced meat, the eggs, the squeezed toast, and the cooled onion mixture into a large mixing bowl.
  11. 11. Add the mustard and the paprika powder to the meat mixture.
  12. 12. Season everything generously with salt and pepper.
  13. 13. Knead the ingredients well with your hands until a homogeneous and formable meat dough forms.
  14. 14. Form small balls or flat meatballs from the dough with a diameter of about 5 to 6 centimeters.
  15. 15. Heat clarified butter in a frying pan.
  16. 16. Place the meatballs in the hot pan and fry them slowly over medium heat.
  17. 17. Fry the meatballs for 6 to 8 minutes until they are golden brown all around.
  18. 18. Turn the meatballs occasionally to ensure they brown evenly.
  19. 19. Remove the finished meatballs from the pan.
  20. 20. Serve the meatballs while still warm or let them cool down and serve them cold.
