🍳 Overnight Soaked Buckwheat with Strawberry Cream

Ingredients
- 300 g Buckwheat
- 0.5 Vanilla pod
- 300 g Strawberries
- 400 ml Oat drink (Oat milk)
- 10 g Agave syrup (2 tsp)
- 50 g Almond flakes (3 tbsp)
Instructions
- 1. Place the buckwheat in a jar and cover it with cold water.
- 2. Let the buckwheat soak overnight.
- 3. Drain the water the next day.
- 4. Rinse the buckwheat under running water.
- 5. Remove one third of the soaked grain and set it aside.
- 6. Slice the vanilla pod lengthwise.
- 7. Scrape out the tiny seeds using the back of a knife.
- 8. Remove the green stems from the strawberries.
- 9. Wash the strawberries well.
- 10. Pat the strawberries dry.
- 11. Cut the strawberries in half or quarters depending on their size.
- 12. Save 75 grams of the berries for decoration.
- 13. Mix the oat drink with the remaining two-thirds of the buckwheat.
- 14. Add the remaining strawberries to the mixture.
- 15. Blend everything smooth using a hand blender.
- 16. Place the pureed mixture in a pot.
- 17. Add the agave syrup.
- 18. Add the vanilla seeds.
- 19. Warm the mixture over medium heat.
- 20. Stir regularly.
- 21. Let it warm for 2 to 3 minutes.
- 22. Stir in the reserved buckwheat.
- 23. Fill the warm porridge into bowls or glasses.
- 24. Decorate it with the reserved strawberries.
- 25. Sprinkle a few sliced almonds over it.
