🍽️ Buckwheat noodles with shrimp, pak choi, broccoli and kimchi

Ingredients
- 1 clove garlic
- 250 g shrimp (kitchen-ready, peeled and deveined)
- 2 pak choi (300 g)
- 500 g broccoli
- 250 g soba noodles (buckwheat noodles)
- salt
- 1 lime
- 2 tbsp tahini (30 g)
- 1 tsp honey
- 2 tbsp sesame oil
- 80 g kimchi (from the refrigerated section)
- 0.5 bunch coriander (10 g)
- 20 g sesame seeds (20 g)
Instructions
- 1. Peel the garlic and chop it finely.
- 2. Wash the shrimp and let them drain well.
- 3. Clean the pak choi and wash it.
- 4. Cut the pak choi lengthwise into four strips.
- 5. Prepare the broccoli and wash it.
- 6. Divide the broccoli into small florets.
- 7. Halve the broccoli florets.
- 8. Peel the stalk of the broccoli.
- 9. Slice the stalk thinly.
- 10. Cook the noodles and broccoli in plenty of salted boiling water for 4 to 5 minutes until al dente.
- 11. Drain the noodles and broccoli.
- 12. Let the noodles and broccoli drain well.
- 13. Rinse the lime with hot water.
- 14. Dry the lime.
- 15. Squeeze the juice from half a lime.
- 16. Slice the remaining lime.
- 17. Stir the lime juice with tahini, honey, 3 to 4 tablespoons of water and salt until smooth.
- 18. Heat the sesame oil in a large pan.
- 19. Fry the shrimp in it on all sides for 5 minutes over medium heat.
- 20. Add the garlic and pak choi.
- 21. Simmer the garlic and pak choi for another 3 minutes.
- 22. Remove the shrimp, pak choi and garlic from the pan.
- 23. Add the noodles, broccoli and sauce to the still hot pan.
- 24. Mix everything well.
- 25. Divide the noodles with broccoli among 4 deep plates.
- 26. Arrange the shrimp, pak choi and kimchi on top.
- 27. Wash the coriander.
- 28. Shake the coriander dry.
- 29. Pick off the coriander leaves.
- 30. Serve the noodles garnished with coriander, lime slices and sesame seeds.
