🍰 Animal-shaped Buckwheat Cookies

Ingredients
- 600 g Buckwheat flour
- 300 g Butter
- Salt
- 200 g Apricot jam
- 125 g Powdered sugar
- Buckwheat flour (for the work surface)
Instructions
- 1. Put the flour, butter, 200 milliliters of water, and a pinch of salt into a bowl.
- 2. Knead the ingredients quickly into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in cling film.
- 5. Place the dough in the refrigerator for 1 hour.
- 6. Divide the dough into four equal parts after the chilling time.
- 7. Lightly dust a work surface with flour.
- 8. Roll each dough part on the floured surface to a thickness of about 4 millimeters.
- 9. Cut out or roll six animal heads from each dough part.
- 10. Optionally use a template for the shapes.
- 11. Place the cut-out shapes on a baking sheet.
- 12. Gather the remaining dough scraps.
- 13. Knead the scraps back together into a new dough.
- 14. Roll the new dough out again on a floured surface.
- 15. Cut out more animal heads from this dough as well.
- 16. Preheat the oven to 200 degrees.
- 17. Place the baking sheet with the cookies on the middle rack.
- 18. Bake the cookies for about 10 minutes.
- 19. Open the oven door after baking.
- 20. Let the cookies cool down in the turned-off oven.
- 21. Warm up the apricot jam in a pot or microwave.
- 22. Pass the warm jam through a fine sieve.
- 23. Spread a thin layer of the sieved jam onto the cooled cookies.
- 24. Mix powdered sugar with 1 tablespoon of water until smooth.
- 25. Fill the sugar mixture into a small piping bag.
- 26. Pipe eyes, nose, and mouth onto the animal heads.
