  1. 1. Whisk the honey, butter, and vanilla sugar until creamy. Add the eggs one by one. Stir in the flour and nuts, then gently fold in the baking powder at the end.
  2. 2. Stir the milk, lemon zest, cinnamon, cloves, allspice, cardamom, and salt into the butter mixture. Let the batter rest covered for about 10 minutes to allow it to swell.
  3. 3. Grease the waffle iron with a little butter and preheat it on medium heat. Pour 1 to 2 small ladles of batter into it, spread it out, and bake the waffle. Remove it and keep it warm. Grease the waffle iron with a little butter in between batches.
