  1. 1. Warm 125 milliliters of milk until it is lukewarm.
  2. 2. Whisk the lukewarm milk in a bowl with yeast, a pinch of sugar, and one tablespoon of flour.
  3. 3. Cover the bowl and place it in a warm spot.
  4. 4. Let the mixture rise for 15 to 20 minutes until it expands.
  5. 5. Add another 125 milliliters of milk, 50 grams of raw cane sugar, the remaining flour, the egg yolk, a pinch of salt, 50 grams of butter, and ground almonds to the bowl.
  6. 6. Knead all ingredients into a soft yeast dough.
  7. 7. Cover the dough again and let it rise for 30 minutes.
  8. 8. Shape the dough into a roll with a diameter of 4 to 5 centimeters.
  9. 9. Cut the roll into slices about 3 centimeters thick.
  10. 10. Place the slices close together in a baking dish.
  11. 11. Lightly grease the dish with some fat if necessary.
  12. 12. Let the dumplings rise in the dish for another 15 minutes.
  13. 13. Warm the remaining butter.
  14. 14. Brush the surface of the dumplings with the warm butter.
  15. 15. Preheat the oven to 200 degrees Celsius (convection 180 degrees Celsius or gas mark 3).
  16. 16. Bake the dumplings for 30 minutes until golden brown.
  17. 17. Mix cornstarch with a little water until a smooth paste forms.
  18. 18. Heat the remaining milk in a pot.
  19. 19. Stir the cornstarch-water paste into the hot milk.
  20. 20. Stir in the raw cane sugar and bring the mixture to a brief boil.
  21. 21. Let the sauce thicken over low heat while stirring constantly for 10 minutes.
  22. 22. Cut the vanilla pod in half lengthwise.
  23. 23. Scrape out the vanilla seeds with a knife.
  24. 24. Add the vanilla seeds to the finished sauce.
  25. 25. Turn the baked dumplings out of the dish.
  26. 26. Carefully separate the individual dumplings from each other.
  27. 27. Arrange the dumplings on plates.
  28. 28. Pour the vanilla sauce over the dumplings.
  29. 29. Dust the dumplings with raw cane powdered sugar if desired.
  30. 30. Serve the dumplings immediately.
