🍽️ Ciabatta Bruschetta with Goat Cheese and Grilled Pepper

Ingredients
- 4 bell peppers (yellow and red)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- salt
- pepper
- 1 ciabatta
- 1 garlic clove
- 200 g goat cheese (log)
- 2 tbsp fresh chopped parsley
Instructions
- 1. Switch the oven to the grill function and preheat it.
- 2. Wash the peppers thoroughly.
- 3. Cut the peppers in half.
- 4. Remove the seeds and the white pith from the pepper halves.
- 5. Place the pepper halves skin-side up on a lightly oiled baking sheet.
- 6. Grill the peppers for about 10 minutes until the skin blisters.
- 7. Remove the baking sheet from the oven.
- 8. Cover the hot peppers with a damp cloth.
- 9. Let the peppers cool under the cloth.
- 10. Peel the browned skin off the peppers.
- 11. Cut the peeled vegetable into thin strips.
- 12. Mix the pepper strips with the remaining oil.
- 13. Season the peppers with lemon juice, salt, and pepper.
- 14. Cut the ciabatta bread into about 8 thick slices.
- 15. Grill the bread slices on both sides until golden brown.
- 16. Remove the toasted bread slices from the oven.
- 17. Cut the garlic clove in half.
- 18. Rub the cut sides of the garlic over the warm bread slices.
- 19. Distribute the seasoned pepper strips on the bread slices.
- 20. Place the goat cheese slices on the peppers.
- 21. Serve the bruschetta garnished with fresh parsley.
