🥗 Watercress and Cucumber Salad

Ingredients
- 400 g cucumber (1 cucumber)
- salt
- 200 g watercress (2 bunches)
- 200 g sorrel (1 bunch)
- 1 small red onion
- 1 tbsp tarragon mustard
- 2 tbsp white wine vinegar
- pepper
- 5 tbsp rapeseed oil
- 125 g smoked salmon (sliced)
Instructions
- 1. Wash the cucumber thoroughly and cut it in half lengthwise. Slice the cucumber thinly, sprinkle with salt, and let it drain in a sieve for 15 minutes.
- 2. In the meantime, wash the watercress and sorrel, remove any damaged leaves, and dry the greens thoroughly. Cut the herbs into bite-sized pieces.
- 3. Peel the onion, cut it in half, and slice it thinly.
- 4. Whisk together the tarragon mustard, vinegar, salt, and pepper. Stir in the oil until a creamy dressing forms. Arrange the cucumbers, watercress, sorrel, onions, and smoked salmon attractively on a platter. Drizzle the vinaigrette over everything and serve the salad immediately.
