🍲 Rich Liver Spaetzle in Broth

Ingredients
- 150 g beef liver (kitchen-ready prepared)
- 1 onion
- 40 g butter
- 60 g breadcrumbs
- egg
- 1 pinch lemon zest
- 1 tsp dried marjoram
- salt
- pepper (from the mill)
- nutmeg
- 1 l meat broth
- chopped parsley
Instructions
- 1. Cut the liver into small pieces.
- 2. Peel the onion and chop it roughly.
- 3. Press the liver and the onion through a meat grinder.
- 4. Beat the butter until fluffy.
- 5. Stir in breadcrumbs and beaten egg alternately into the butter.
- 6. Add the ground liver.
- 7. Mix everything well.
- 8. Season with lemon zest, marjoram, salt, pepper, and nutmeg.
- 9. If the mixture is too soft, add more breadcrumbs.
- 10. Bring the broth to a boil.
- 11. Season the broth with salt and pepper.
- 12. Add the dough to the boiling broth using a spaetzle press or a spaetzle cutter.
- 13. Let the spaetzle cook gently for 5 to 10 minutes.
- 14. Serve the spaetzle garnished with fresh parsley.
