🍽️ Broth with Semolina Dumplings

Ingredients
- 1 l meat broth
- 40 g soft butter
- 50 g semolina
- 1 egg
- salt
- pepper
- nutmeg
- 2 tbsp chive rings
Instructions
- 1. Beat the butter with a pinch of salt and grated nutmeg until creamy.
- 2. Gently fold in the egg.
- 3. Stir in the semolina.
- 4. Let the dough rest for ten minutes.
- 5. Bring the broth to a boil in a pot.
- 6. Season to taste with salt and pepper.
- 7. Dip two teaspoons in water to wet them.
- 8. Scoop portions of the dough.
- 9. Shape them into elongated dumplings.
- 10. Add the dumplings to the boiling broth.
- 11. Let them simmer gently over low heat for about fifteen minutes.
- 12. Serve the soup with the dumplings in plates or bowls.
- 13. Garnish with fresh chives.
