  1. 1. Chop the chocolate into coarse pieces.
  2. 2. Melt the chocolate pieces gently over a pot of hot water or in short intervals in the microwave.
  3. 3. Remove the bowl with the chocolate from the heat and set it aside.
  4. 4. Beat the butter and the whole cane sugar with an electric mixer until creamy and airy.
  5. 5. Slice the vanilla pod lengthwise.
  6. 6. Scrape out the tiny seeds with a knife.
  7. 7. Stir the vanilla seeds into the butter-sugar mixture.
  8. 8. Add the eggs.
  9. 9. Mix the eggs in until creamy.
  10. 10. Gently fold the melted chocolate into the mixture using a spoon.
  11. 11. Add spelt flour, cocoa powder, baking powder, and a pinch of salt.
  12. 12. Mix everything into a smooth batter.
  13. 13. Roughly chop the walnuts.
  14. 14. Fold the walnuts into the batter at the end.
  15. 15. Pour the batter into a baking pan lined with parchment paper.
  16. 16. Bake the brownies in the preheated oven at 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-assisted; gas level 2 to 3) for about 40 minutes.

  19. 19. Cut them into individual pieces.
  20. 20. Dust them lightly with cocoa powder if desired.
