🍰 Juicy Chocolate Brownie with Fruit

Ingredients
- 300 g dark chocolate
- 2 pears
- 2 bananas
- lemons (juice)
- 8 eggs
- salt
- 250 g soft butter
- 150 g sugar
- 150 g flour
- 150 g ground almond kernels
- 2 tsp baking powder
- 100 g dark chocolate
Instructions
- 1. Break the chocolate into small pieces.
- 2. Place a bowl over a pot of hot water.
- 3. Melt the chocolate pieces in the bowl, stirring occasionally.
- 4. Remove the bowl from the pot.
- 5. Let the chocolate mixture cool down slightly.
- 6. Cut the pears into quarters.
- 7. Peel the pears and remove the core.
- 8. Peel the bananas.
- 9. Dice all the fruits into small cubes.
- 10. Mix the fruits with the lemon juice.
- 11. Separate the eggs into yolks and whites.
- 12. Add a pinch of salt to the egg whites.
- 13. Whip the egg whites until stiff peaks form.
- 14. Cut the butter into small pieces.
- 15. Beat the butter with the sugar until creamy.
- 16. Gradually mix in the egg yolks into the butter-sugar mixture.
- 17. Fold in the slightly cooled chocolate mixture.
- 18. Mix the flour with the ground almonds and baking powder.
- 19. Gently fold the dry mixture into the chocolate batter.
- 20. Mix the prepared fruits into the batter.
- 21. Carefully fold in the whipped egg whites to keep the mixture airy.
- 22. Grease a baking sheet with butter.
- 23. Spread the batter onto the baking sheet.
- 24. Smooth the surface of the batter.
- 25. Preheat the oven to 200 degrees (conventional or fan-assisted).
- 26. Place the baking sheet on the middle rack.
- 27. Bake the brownie for about 25 minutes.
- 28. Remove the baking sheet from the oven.
- 29. Let the brownie cool down completely on the sheet.
- 30. Break the semi-bitter chocolate into small pieces.
- 31. Melt the chocolate again using the bain-marie method.
- 32. Spread the melted chocolate evenly over the cooled brownie.
- 33. Cut the finished brownie into squares.
- 34. Serve the brownie.
