🍽️ Rührei-Lachs-Toast with Goat Cheese

Ingredients
- 2 handfuls young spinach
- 8 slices whole grain bread
- 6 eggs
- 4 tbsp whipping cream
- 2 tbsp freshly chopped parsley
- 1 tbsp butter
- salt
- pepper (from the mill)
- 150 g goat cream cheese
- 4 slices smoked salmon
Instructions
- 1. Rinse the spinach under cold water, remove any tough stems, and dry it using a salad spinner.
- 2. Toast the bread slices in a toaster until they are golden brown and crispy.
- 3. Whisk the eggs with the cream and the finely chopped parsley. Cook the mixture in a hot pan with the butter to make creamy scrambled eggs (eggs cooked while being stirred constantly). Season the scrambled eggs with salt and pepper at the end.
- 4. Spread the goat cream cheese on four bread slices. Top them with the dry spinach and the salmon pieces. Distribute the scrambled eggs evenly on top. Cover each sandwich with another bread slice and serve.
