🍽️ Bread Salad with Smoked Potatoes

Ingredients
- 700 g firm-cooking potatoes
- Vegetable oil (for the grill rack)
- 0.5 cucumber
- 2 stalks celery
- 1 handful cilantro leaves
- 2 handfuls parsley
- 4 slices mixed bread
- 3 garlic cloves
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt
- pepper (from the mill)
- 2 tbsp sesame seeds
Instructions
- 1. Preheat the smoker to 100 degrees Celsius. Wash the potatoes thoroughly and pat them dry. Place them on a lightly oiled rack and smoke them for about 45 minutes. Remove them afterwards, let them cool down, and cut them into wedges.
- 2. Peel the cucumber and dice it into small cubes. Wash the celery, trim it, and cut it into small cubes as well. Rinse the coriander and parsley, shake off excess water, and reserve a few stems for garnish while finely chopping the rest.
- 3. Cut the bread into coarse cubes. Peel the garlic. Heat the oil in a pan and press the garlic into it. Add the bread and fry until crispy.
- 4. Remove the bread from the pan and mix it in a bowl with the vegetables, herbs, and potatoes. Sprinkle everything with lemon juice, salt, pepper, and sesame seeds, then adjust the seasoning. Garnish with the remaining herbs and serve the salad.
