🍽️ Crunchy Bread Salad with Pine Nuts

Ingredients
- 150 g whole grain baguette
- 5 tbsp olive oil
- 250 g tomatoes
- 1 salad cucumber
- 1 each red, green, and yellow bell peppers
- celery stalks
- 2 tbsp pine nuts
- 1 garlic clove
- 2 tbsp balsamic vinegar
- salt, pepper
- 1 handful basil
Instructions
- 1. Cut the baguette into small, bite-sized cubes.
- 2. Heat two tablespoons of olive oil in a large non-stick pan.
- 3. Fry the bread cubes until golden brown.
- 4. Place the finished cubes on kitchen paper to absorb excess oil.
- 5. Rinse the tomatoes and cucumber thoroughly.
- 6. Remove any tough parts from the tomatoes and cucumber.
- 7. Quarter the bell pepper and remove the seeds.
- 8. Rinse the prepared bell pepper as well.
- 9. Cut the tomato, cucumber, and pepper vegetables into bite-sized pieces.
- 10. Peel the celery and rinse it.
- 11. Slice the celery into thin slices.
- 12. Heat the remaining olive oil in a small pan.
- 13. Lightly toast the pine nuts in it.
- 14. Peel the garlic and press it directly into the pan with the nuts.
- 15. Mix the mixture with vinegar, salt, and pepper.
- 16. Gently fold the prepared vegetables into the pine nut dressing.
- 17. Add the crispy bread cubes and the basil leaves.
- 18. Mix everything lightly together.
- 19. Serve the bread salad immediately.
