🍽️ Fig and Pine Nut Bread Salad

Ingredients
- 0.5 Ciabatta
- 4 fresh figs
- 120 g dried figs
- 1 large red onion
- 50 g peeled pine nuts
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- salt
- pepper (from the mill)
- 1 tbsp mint
Instructions
- 1. Cut the bread into coarse cubes.
- 2. Wash the fresh figs under running water.
- 3. Remove the stems from the fresh figs.
- 4. Slice the fresh figs into wedges.
- 5. Cut the dried figs into thin strips.
- 6. Peel the onion.
- 7. Halve the peeled onion.
- 8. Slice the onion halves into thin strips.
- 9. Place the pine nuts in a non-stick pan.
- 10. Toast the pine nuts without added fat until golden yellow.
- 11. Remove the toasted pine nuts from the pan.
- 12. Let the pine nuts cool down completely.
- 13. Place the bread in a large bowl.
- 14. Add the fresh figs to the bowl.
- 15. Add the dried figs to the bowl.
- 16. Add the onion strips to the bowl.
- 17. Add the cooled pine nuts to the bowl.
- 18. Mix all ingredients in the bowl well.
- 19. Add the oil to the salad mixture.
- 20. Add the vinegar to the salad mixture.
- 21. Season the salad generously with salt.
- 22. Season the salad generously with pepper.
- 23. Divide the salad onto the plates.
- 24. Garnish the salad with fresh mint leaves.
