🍽️ Crispy Bread Chips with Chicken

Ingredients
- 2 stale bread rolls (from the day before)
- olive oil
- salt
- pepper (from the mill)
- 400 g beans
- 15 leaves lemon balm
- lemons
- 1 clove garlic
- 1 tbsp crème fraîche
- 500 g smoked chicken breast fillet sliced into thick slices (3 mm)
Instructions
- 1. Rinse the beans thoroughly.
- 2. Boil the beans for 4 to 5 minutes in boiling water (this short cooking process is called blanching).
- 3. Remove the beans from the water and let them drain well.
- 4. Wash the lemon balm leaves and then dry them carefully.
- 5. Coarsely puree the drained beans and the lemon balm.
- 6. Season the puree mixture with salt and pepper.
- 7. Add 4 tablespoons of olive oil and some lemon juice to the mixture.
- 8. Peel the garlic and press it through a garlic press directly into the bowl.
- 9. Stir all ingredients in the bowl well.
- 10. Add crème fraîche and mix it in.
- 11. Taste the mixture and adjust with more salt and pepper if needed.
- 12. Slice the bread rolls into very thin slices.
- 13. Toast the bread slices in the oven under the grill until golden brown.
- 14. Drizzle the toasted slices with a little olive oil.
- 15. Top each slice with a piece of chicken breast.
- 16. Add one tablespoon of the bean puree mixture to each slice.
- 17. Garnish the finished chips with fresh beans and lemon balm as desired.
