🍰 Brambleberry Pancakes

Ingredients
- 150 g whole wheat flour
- 1 tbsp oil
- 2 egg yolks
- 375 ml milk (1.5% fat)
- some water
- 1 pinch salt
- 2 egg whites
- oil (for frying)
- 400 g blackberries
- 125 ml coffee cream
- 50 g powdered sugar
Instructions
- 1. Mix flour, milk, egg yolks, a little water, and a pinch of salt into a thin batter. Let it rest briefly, check the consistency, and add more water if necessary.
- 2. Whip the egg whites until stiff and gently fold them into the batter. Bake 12 thin pancakes and keep them warm. Wash the blackberries, remove any stems, and let them drain. Whip the coffee cream until stiff, add the powdered sugar, and beat it firmly again.
- 3. Fold the blackberries into the cream. Spread 2 to 3 tablespoons of the mixture onto each pancake and fold them gently.
