Ingredients
- 1.5 kg ripe blackberries
- 0.5 kg pectin sugar 3:1
- 1 organic lemon
- 1 tbsp cinnamon powder
- 3 sprigs lavender
Instructions
- 1. Pick the blackberries off the stems.
- 2. Wash the berries thoroughly.
- 3. Let the blackberries drain well in a colander.
- 4. Rinse the lemon under hot water.
- 5. Dry the lemon.
- 6. Finely grate the lemon zest.
- 7. Cut the lemon in half.
- 8. Squeeze the juice from the lemon.
- 9. Briefly rinse the lavender.
- 10. Shake the lavender dry.
- 11. Carefully pluck off the small lavender flowers.
- 12. Place the blackberries in a bowl.
- 13. Add the lemon zest to the bowl.
- 14. Add the lemon juice to the bowl.
- 15. Add the lavender flowers to the bowl.
- 16. Mix everything with the jam sugar.
- 17. Mix everything with cinnamon.
- 18. Let the mixture rest for two hours.
- 19. Pour the entire mixture into a saucepan.
- 20. Heat the mixture slowly.
- 21. Let the mixture bubble vigorously for about four minutes.
- 22. Fill the hot jam into clean preserving jars.
- 23. Seal the jars tightly.
- 24. Place the jars upside down for ten minutes.
- 25. Turn the jars right side up.
- 26. Let the jars cool down completely.
- 27. Store the jam in the refrigerator after opening.
- 28. Consume the jam promptly.
