🍰 Blackberry Yogurt Ice Cream with Pistachios

Ingredients
- 30 g pistachio kernels (2 tbsp)
- 50 g fresh blackberries
- 2 sprigs mint
- 400 g blackberries (frozen)
- 400 g yogurt (3.5% fat)
- 50 g finely ground birch sugar
- 1 tsp lemon juice
- 40 ml blackberry juice
Instructions
- 1. Chop the pistachios lengthwise into small pieces. Wash the blackberries and let them drain well. Wash the mint, shake it dry, and pluck the leaves from the stems.
- 2. Put the frozen blackberries, the yogurt, the birch sugar, the lemon juice, and the blackberry juice into a blender and puree the mixture until smooth.
- 3. Divide the ice cream into small bowls. Sprinkle the pistachios on top and serve it garnished with fresh blackberries and mint leaves.
