  1. 1. Chop the pistachios lengthwise into small pieces. Wash the blackberries and let them drain well. Wash the mint, shake it dry, and pluck the leaves from the stems.
  2. 2. Put the frozen blackberries, the yogurt, the birch sugar, the lemon juice, and the blackberry juice into a blender and puree the mixture until smooth.
  3. 3. Divide the ice cream into small bowls. Sprinkle the pistachios on top and serve it garnished with fresh blackberries and mint leaves.
