🍳 Fruity Jelly Made from Blackberries and Elderberries

Ingredients
- 1400 g blackberries
- 600 g elderberries
- 500 g jam sugar (3:1)
- 0.5 lemon
Instructions
- 1. Rinse the blackberries under running water.
- 2. Place the blackberries in a sieve and let them drain well.
- 3. Rinse the elderberries briefly.
- 4. Pat the elderberries dry with a cloth.
- 5. Remove the small stems from the elderberries.
- 6. Place all the prepared berries into a large pot.
- 7. Pour 150 milliliters of water over the berries.
- 8. Cover the pot with a lid.
- 9. Heat the mixture slowly until it boils.
- 10. Let the berries simmer for about 30 minutes with the lid closed.
- 11. Stir the mixture gently from time to time while cooking.
- 12. Line a fine sieve with a clean kitchen towel.
- 13. Hang the sieve over a large pot.
- 14. Place the cooked berries into the lined sieve.
- 15. Let the juice drain completely for 5 to 6 hours.
- 16. Rinse three screw-top jars (400 milliliters each) with boiling water.
- 17. Also rinse the jar lids with boiling water.
- 18. Place the jars and lids upside down on a kitchen towel.
- 19. Measure exactly 1.2 liters of the drained berry juice.
- 20. Add the juice along with the jam sugar back into the pot.
- 21. Bring the mixture to a boil while stirring constantly.
- 22. Skim off the rising foam with a skimmer.
- 23. Let the jelly bubble vigorously for 4 to 6 minutes.
- 24. Juice a lemon to extract the juice.
- 25. Stir 2 tablespoons of lemon juice into the jelly mixture.
- 26. Cook the mixture for another 30 seconds.
- 27. Fill the hot liquid immediately into the prepared jars.
- 28. Seal the jars tightly with the lids.
- 29. Place the jars upside down for 5 minutes.
- 30. Then turn the jars upright.
