  1. 1. Wash the broccoli and cut it into small florets. Also wash the tomatoes and the spring onions. Briefly boil the broccoli in salted water until tender-crisp, then immediately shock it in ice water to keep its color. Let it drain well. Cut the tomatoes in half.
  2. 2. Clean the spring onions and slice them into thin rings. Mix salt, pepper, lemon juice, yogurt, and 3 tablespoons of oil to make a sauce. Arrange the broccoli, tomatoes, and spring onions on plates and drizzle with the sauce before serving.
