🍽️ Cheesy Broccoli Gratin

Ingredients
- 800 g broccoli florets
- salt
- 2.5 tbsp butter
- 2 tbsp flour
- 200 ml whipping cream (at least 30% fat content)
- 200 g processed cheese
- pepper (from the mill)
- nutmeg
- 250 g freshly grated parmesan
Instructions
- 1. Turn on the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the broccoli thoroughly.
- 3. Bring a pot of salted water to a boil.
- 4. Cook the broccoli for 5 minutes (this is called blanching, which means briefly cooking in boiling water).
- 5. Remove the broccoli from the water.
- 6. Rinse the broccoli immediately with cold water to stop the cooking process.
- 7. Keep the broccoli cooking liquid in a container.
- 8. Melt the butter in a pot.
- 9. Stir the flour into the melted butter.
- 10. Let the butter-flour mixture brown slightly.
- 11. Pour in 600 milliliters of the reserved broccoli cooking liquid while stirring constantly.
- 12. Add the cream to the sauce.
- 13. Bring the sauce to a boil once.
- 14. Reduce the heat slightly.
- 15. Stir the processed cheese into the sauce.
- 16. Season the sauce with salt, pepper, and grated nutmeg.
- 17. Let the sauce thicken for 5 minutes while stirring occasionally.
- 18. Divide the broccoli among 4 small baking dishes.
- 19. Pour the cheese sauce evenly over the broccoli.
- 20. Sprinkle the remaining cheese on top.
- 21. Place the baking dishes in the preheated oven.
- 22. Bake the gratin for about 15 minutes until it is golden brown on top.
- 23. Remove the baking dishes from the oven.
- 24. Serve the dish immediately while hot.
