🍽️ Broccoli-Leek Vegetable

Ingredients
- 150 g broccoli
- 70 g leek (1 stalk)
- 100 ml classic vegetable broth
- 40 g yogurt (0.1 % fat)
- 1 tsp ajvar
- salt
- nutmeg
Instructions
- 1. Wash the broccoli thoroughly and let it drain in a colander. Remove tough parts and divide the head into small, bite-sized florets.
- 2. Peel the thick stems of the broccoli and slice them into thin rounds.
- 3. Cut the leek stalk lengthwise, wash it thoroughly to remove any sand, and let it drain.
- 4. Cut the leek into pieces approximately one centimeter wide.
- 5. Bring the vegetable broth to a boil in a pot. Add the broccoli and simmer covered for three minutes over low heat. Then add the leek and simmer for another three minutes covered.
- 6. Place the yogurt in a small bowl. Mix it well with ajwar (a roasted red pepper paste) and salt.
- 7. Grate some fresh nutmeg over the vegetables and season with salt. Serve the vegetables with the yogurt sauce.
