🍽️ Creamy Broccoli Gratin with Apricots

Ingredients
- 1 large broccoli (750 g)
- 2 stalks celery
- salt
- pepper (from the mill)
- 4 ripe apricots
- 200 g goat cream cheese
- 200 g whipping cream
- 1 tbsp butter
- cayenne pepper
- 2 tbsp sliced almonds
Instructions
- 1. Wash the broccoli thoroughly.
- 2. Divide the broccoli into small florets.
- 3. Cut off the tough stems.
- 4. Peel the tough skin from the stems.
- 5. Dice the soft inner part of the stems.
- 6. Wash the celery.
- 7. Slice the celery into thin rounds.
- 8. Bring water to a boil and add salt.
- 9. Boil the broccoli florets for 3 minutes.
- 10. Shock the florets immediately with cold water.
- 11. Let the vegetables drain well.
- 12. Wash the apricots.
- 13. Briefly pour boiling water over the apricots.
- 14. Rinse the fruits with cold water.
- 15. Peel the apricots.
- 16. Halve the apricots.
- 17. Remove the pits.
- 18. Cut the flesh into thin strips.
- 19. Crumble the goat cheese roughly.
- 20. Stir the cheese into the cream until smooth.
- 21. Heat butter in a pan.
- 22. Sauté the diced broccoli stems and celery slices.
- 23. Season the vegetables with salt.
- 24. Simmer the vegetables for 3 to 4 minutes.
- 25. Grease a baking dish.
- 26. Place the cooked vegetables in the dish.
- 27. Pour half of the cheese-cream mixture over the vegetables.
- 28. Arrange the broccoli florets on top.
- 29. Place the apricot strips on top.
- 30. Season everything with salt and pepper.
- 31. Spread the remaining cheese-cream mixture evenly.
- 32. Sprinkle the gratin with almonds.
- 33. Preheat the oven to 200 degrees.
- 34. Bake the gratin for about 25 minutes.
