🍽️ Crunchy Sesame Rolls

Ingredients
- 15 g fresh yeast
- 1 kg wheat flour (type 550)
- 500 g spelt flour (type 630)
- 1 tbsp salt
- 75 ml rapeseed oil
- flour (for working)
- 1 egg
- sesame (for sprinkling)
Instructions
- 1. Dissolve the yeast in two to three tablespoons of cold water.
- 2. Put the flour, salt, oil, and about 650 milliliters of cold water into a large bowl.
- 3. Pour the yeast water into the other ingredients.
- 4. Knead the dough until smooth, preferably using a food processor.
- 5. Add more flour or water if necessary.
- 6. Cover the bowl.
- 7. Let the dough rest in the refrigerator for at least 10 hours, preferably overnight.
- 8. Dust a work surface with flour.
- 9. Divide the dough into 25 equal pieces.
- 10. Shape the pieces into round rolls.
- 11. Place the rolls on a baking sheet lined with baking paper.
- 12. Let the rolls rise for about 30 minutes.
- 13. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 14. Whisk the egg in a small bowl.
- 15. Brush the rolls with the whisked egg.
- 16. Sprinkle the rolls generously with sesame seeds.
- 17. Bake the rolls in the center of the oven for about 15 minutes.
- 18. Let the rolls cool on a wire rack.
