  1. 1. Dissolve the yeast in two to three tablespoons of cold water.
  2. 2. Put the flour, salt, oil, and about 650 milliliters of cold water into a large bowl.
  3. 3. Pour the yeast water into the other ingredients.
  4. 4. Knead the dough until smooth, preferably using a food processor.
  5. 5. Add more flour or water if necessary.
  6. 6. Cover the bowl.
  7. 7. Let the dough rest in the refrigerator for at least 10 hours, preferably overnight.
  8. 8. Dust a work surface with flour.
  9. 9. Divide the dough into 25 equal pieces.
  10. 10. Shape the pieces into round rolls.
  11. 11. Place the rolls on a baking sheet lined with baking paper.
  12. 12. Let the rolls rise for about 30 minutes.
  13. 13. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  14. 14. Whisk the egg in a small bowl.
  15. 15. Brush the rolls with the whisked egg.
  16. 16. Sprinkle the rolls generously with sesame seeds.
  17. 17. Bake the rolls in the center of the oven for about 15 minutes.
  18. 18. Let the rolls cool on a wire rack.
