  1. 1. Pour boiling water over the tomatoes briefly.
  2. 2. Immediately plunge them into cold water to stop the cooking process.
  3. 3. Peel the skin off the tomatoes.
  4. 4. Cut the tomatoes into quarters.
  5. 5. Remove the seeds from the flesh.
  6. 6. Dice the flesh into small cubes.
  7. 7. Place the minced meat, egg, breadcrumbs, salt, pepper, half a teaspoon of oregano, and tomato ketchup in a bowl.
  8. 8. Mix all the filling ingredients well together.
  9. 9. Roll the meat mixture into small balls.
  10. 10. Heat the olive oil in a pan.
  11. 11. Brown the meatballs on all sides over medium heat.
  12. 12. Add the diced tomatoes to the pan.
  13. 13. Season the mixture with salt, pepper, and the remaining oregano.
  14. 14. Simmer the filling covered over low heat for about 10 minutes.
  15. 15. Wash the bell pepper thoroughly.
  16. 16. Remove the stem of the bell pepper.
  17. 17. Cut the bell pepper in half.
  18. 18. Remove the seeds and all white inner membranes.
  19. 19. Dice the bell pepper vegetable finely.
  20. 20. Slice the buns lengthwise.
  21. 21. Do not cut all the way through to create large pockets.
  22. 22. Brush the inside of the buns with the butter.
  23. 23. Fill the buns with the tomato and meatball mixture.
  24. 24. Sprinkle the diced bell pepper over the filling.
  25. 25. Sprinkle the Parmesan cheese over it.
  26. 26. Serve the buns immediately.
