🍽️ Crispy Buns with Tomatoes and Basil

Ingredients
- 60 g dried tomatoes in oil (drained)
- 5 g basil leaves (1 handful)
- 100 g potato flour
- 200 g rice flour
- 2 tbsp rice flour (for working)
- 2.5 tsp guar gum (12 g)
- 100 g cornstarch
- 1.5 packets baking powder (gluten-free)
- 1 tsp salt
- 2 tbsp apple cider vinegar
- 50 g melted butter
Instructions
- 1. Cut the dried tomatoes into small cubes.
- 2. Rinse the fresh basil leaves under running water.
- 3. Shake the leaves dry so that no water remains on them.
- 4. Chop the basil very finely.
- 5. Add all types of flour, the cornstarch, the baking powder, and the salt to a large mixing bowl.
- 6. Whisk the vinegar, the butter, and 375 milliliters of water in a separate container.
- 7. Pour the liquid mixture into the bowl with the dry ingredients.
- 8. Knead the ingredients into a smooth and well-formable dough.
- 9. Work the diced tomatoes and the chopped basil evenly into the dough.
- 10. Divide the dough into eight equal pieces.
- 11. Shape each piece into a small bun.
- 12. Lightly dust your hands with rice flour so that the dough does not stick.
- 13. Place the buns on a baking sheet that you have lined with baking paper.
- 14. Preheat the oven to 200 degrees Celsius (180 degrees Celsius with convection or gas level 3).
- 15. Bake the buns until golden brown for about 30 minutes.
- 16. Remove the buns from the oven and place them on a kitchen rack.
- 17. Allow the buns to cool completely.
