🍽️ Fluffy Brioche Bread

Ingredients
- 500 g flour
- 30 g yeast
- 0.25 l milk
- 2 eggs
- 70 g sugar
- 0.5 tsp salt
- 0.5 lemon (zested)
- 120 g butter
- 1 egg yolk
- butter (for the pan)
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a small well in the center of the flour.
- 3. Dissolve the yeast in the warm milk.
- 4. Pour the yeast mixture into the well.
- 5. Lightly dust the yeast with some flour from the edges.
- 6. Cover the bowl.
- 7. Let the dough rest for 15 minutes.
- 8. Stir in the eggs.
- 9. Add the lemon zest.
- 10. Add the sugar.
- 11. Add the salt.
- 12. Gently fold in the soft butter.
- 13. Knead everything into a smooth, pliable dough.
- 14. Let the dough rise for another 30 minutes.
- 15. Shape the dough into a ball.
- 16. Place the dough ball in a well-greased springform pan.
- 17. Let the bread rise again for 30 minutes.
- 18. Whisk an egg.
- 19. Brush the surface of the bread with the egg.
- 20. Cut a deep cross into the center with a knife.
- 21. Bake the bread at 190 degrees for 35 minutes until golden brown.
- 22. Let the bread cool completely before serving.
