🍽️ Crispy Cheese Brick Pastry Pockets

Ingredients
- 200 g goat cheese
- 80 black, pitted olives (chopped)
- 4 sheets brick pastry
- 2 tbsp olive oil
- 1 bunch thyme (chopped)
- salt
- pepper (from the mill)
- olive oil (for frying)
Instructions
- 1. Mash the goat cheese thoroughly with a fork. Mix it well with the olives, two tablespoons of olive oil, and the finely chopped thyme. Season the mixture to taste with a pinch of salt and freshly ground black pepper.
- 2. Spread the cheese mixture onto one of the diagonal halves of each square pastry sheet. Fold the pastry over to form triangles. Lightly moisten the edges with water to help them stick, then press the seams firmly together to prevent filling from leaking.
- 3. Fry the pockets in both sides in a pan with plenty of hot olive oil. Cook them for a total of about six minutes until they are golden brown and crispy on both sides. Remove them from the pan and let them drain on kitchen paper to absorb excess oil.
- 4. This delicious specialty pairs wonderfully with robust leaf salads.
