🍽️ Paprika Pan with Pretzel Pieces

Ingredients
- 2 stale pretzels
- 1 onion
- 2 yellow bell peppers
- 4 red pointed bell peppers
- 250 g oyster mushrooms
- 3 tbsp butter
- salt
- pepper (from the mill)
- 6 eggs
- 4 tbsp whipping cream
- 2 tbsp freshly chopped parsley
- 2 tbsp chive rings
Instructions
- 1. Rinse the pretzels briefly under running water to remove the salt coating.
- 2. Cut the pretzels into bite-sized pieces.
- 3. Peel the onion and chop it very finely.
- 4. Wash the bell peppers.
- 5. Halve the peppers lengthwise and remove the seeds.
- 6. Cut the peppers into thin strips.
- 7. Clean the mushrooms.
- 8. Slice the mushrooms into thin strips.
- 9. Heat a large pan.
- 10. Fry the pretzel pieces in 2 tablespoons of butter until golden brown.
- 11. Remove the pretzel pieces from the pan.
- 12. Place the pretzel pieces on kitchen paper to drain the fat.
- 13. Fry the mushrooms and onions in the remaining butter in the same pan for 1 to 2 minutes.
- 14. Add the pepper strips to the pan.
- 15. Let the vegetables simmer for 2 to 3 minutes.
- 16. Season the vegetables with salt and pepper.
- 17. Whisk the eggs in a separate bowl.
- 18. Stir the cream into the eggs.
- 19. Add the chopped parsley to the egg mixture.
- 20. Pour the egg mixture over the vegetables in the pan.
- 21. Stir constantly until the eggs set.
- 22. Mix the pretzel pieces back into the vegetables.
- 23. Taste the dish and adjust the seasoning if needed.
- 24. Serve the dish on plates.
- 25. Sprinkle the dish with fresh chives.
