  1. 1. Peel the onion and cut it into small cubes. Heat 2 tablespoons of olive oil in a pot and sauté the onions in it over medium heat. Add 500 milliliters of water, add the remaining oil, and stir in the cornmeal (corn grits).
  2. 2. Bring the polenta to a boil while stirring constantly. Then let it simmer on low heat for about 20 minutes, stirring frequently. At the end, stir in the butter and season with salt and pepper.
  3. 3. Cut the lemon into quarters and halve these quarters crosswise. Thread the sausage spirals onto metal skewers, alternating with two halved lemon quarters each. Grill the spirals on both sides for about 4 minutes each.
  4. 4. Wash the tomatoes, cut them into quarters, remove the core, and dice the flesh. Peel the shallot and dice it finely. Mix both with vinegar and oil and season with salt and pepper.
  5. 5. Place the polenta on the plates, top with the grilled bratwurst spirals and the tomato salad. Garnish the dish with fresh basil.
