  1. 1. Peel the potatoes, wash them thoroughly, and cut them into small cubes. Boil the cubes in salted water for about 20 minutes until tender.
  2. 2. Peel the onions. Slice three of the onions into rings and finely dice the remaining part.
  3. 3. Drain the cooked potatoes and let them steam for a moment. Press them through a potato ricer. Stir in the fine onion cubes and mix in the cream until you have a smooth mash. Season to taste with salt and pepper.
  4. 4. Heat ghee in a frying pan. Fry the sausages until golden brown. Then keep them warm in a preheated oven at 80 degrees Celsius (convection 60 degrees Celsius, gas mark 1).
  5. 5. Fry the onion rings in the cooking fat until golden brown. Dust them with flour and deglaze with meat broth. Simmer the sauce over medium heat, stirring occasionally, for about 5 minutes. Season with salt and pepper. Wash the parsley, shake it dry, and chop it finely.
  6. 6. Plate the potato-onion mash. Place the fried sausages on top and add the onion sauce. Garnish with fresh parsley and serve immediately.
