🍽️ Fried saus with creamy potato-onion mash

Ingredients
- 500 g floury potatoes
- salt
- 7 onions
- 3 tbsp butter
- 150 ml lukewarm whipping cream
- pepper (from the mill)
- 4 white fried sausages
- 2 tbsp ghee
- 1 tbsp flour (Type 405)
- 250 ml meat broth
- 2 sprigs parsley
Instructions
- 1. Peel the potatoes, wash them thoroughly, and cut them into small cubes. Boil the cubes in salted water for about 20 minutes until tender.
- 2. Peel the onions. Slice three of the onions into rings and finely dice the remaining part.
- 3. Drain the cooked potatoes and let them steam for a moment. Press them through a potato ricer. Stir in the fine onion cubes and mix in the cream until you have a smooth mash. Season to taste with salt and pepper.
- 4. Heat ghee in a frying pan. Fry the sausages until golden brown. Then keep them warm in a preheated oven at 80 degrees Celsius (convection 60 degrees Celsius, gas mark 1).
- 5. Fry the onion rings in the cooking fat until golden brown. Dust them with flour and deglaze with meat broth. Simmer the sauce over medium heat, stirring occasionally, for about 5 minutes. Season with salt and pepper. Wash the parsley, shake it dry, and chop it finely.
- 6. Plate the potato-onion mash. Place the fried sausages on top and add the onion sauce. Garnish with fresh parsley and serve immediately.
